LENTIL CURRY SOUP

 

1 TBSP of butter
1/2 pound diced country ham
1/2 cup diced carrots
1/2 cup diced onions
1 TBSP chopped Garlic
1-2 TBSP Curry powder
4 cups chicken stock
2 cups water
Bay Leaf
little Thyme
1 cup fresh Lentils.
1 TBSP of white vinegar
1 TBSP of butter
Corriander


Melt 1 TBSP of butter in large pot, add ham, carrots, onions and simmer for 3-5 minutes at medium heat. Add Garlic and Curry powder. Mix and blend well for approx 1 minute. To this add chicken stock and water, a Bay Leaf a little Thyme and the fresh Lentils. Bring the whole to a boil reduce heat and cook for approx. 25 minutes or until Lentils are soft, mash the Lentils with a potatoe masher and lightly wish in white vinegar, and 2nd TBSP of butter. You can then sprinkle with Corriander.
